Thanksgiving in Albuquerque!



This is the first time I've been in New Mexico for American Thanksgiving since I was in high school. I wish I had appreciated the pure beauty of this high desert city when I was lucky enough to call it home.

Durango







My parents really wanted to take a mini trip when Aaron and I were visiting for Thanksgiving. We decided to road trip up to Durango, Colorado. Aaron had never been to Colorado before, and my brother wanted to snowboard. It was the perfect little getaway from our getaway. Durango was just as funky and entertaining as I remembered, and the sunsets were incredible.

Breakfast


My favorite breakfast lately: egg cups and black coffee. So simple and so delicious!

Preheat your oven to 350 degrees. Line a muffin tin with prosciutto, and crack an egg into each cup. Crumble in some goat cheese, if you would like. Bake until eggs are as set as you desire. Top with tomato, avocado, salt, and pepper!

Cold


I always find winter difficult, but so far, Pittsburgh hasn't been so bad! No snow, and nothing particularly frigid.  Compared to the unrelenting snow in Halifax last year, I could get used to this!
